Barbeque Vegetable Skewers

  • - 120g halloumi cheese.
  • - 2 baby courgettes or 1 medium courgette.
  • - 1 red onion.  
  • - 12 baby mushrooms.  
  • - 1 yellow pepper.  
  • - 12 cherry tomatoes.
  • - 2tbsp Jalapeño and Raspberry Jelly.

This is a really flavoursome snack that is easy to put together and perfect for a summer evening.

Serves: 6 | Prep Time: 30 minutes | Difficulty: Easy.


  1. Cut the halloumi cheese and courgette into 2cm cubes.

  2. Remove the stalk, seeds and white pith from the pepper. Cut into 2cm pieces.

  3. Peel the onion and cut into 2cm pieces. 

  4. Divide and thread the cheese and vegetables onto 12 wooden skewers.

  5. Using a pastry brush, brush the halloumi and vegetables with the Jalapeño and Raspberry Jelly.

  6. Cook under the grill for 10 minutes until the vegetables are soft.

  7. Serve as a side dish to grilled meat or with some pita bread as a vegetarian meal.
