Egg Fried Rice w/ Chilli Jam

Ingredients:

  • - 250g long grain rice.
  • - Olive oil.
  • - 2tsp Rebel Chilli Raspberry & Jalapeño Jam.
  • - 1 red pepper, deseeded and finely diced.
  • - 100g broccoli florets.
  • - 50g frozen peas.
  • - 2 stalks of spring onion, finely chopped plus some to garnish.
  • - 2 eggs.
  • - Salt and pepper.
  • - 1 red chilli, finely chopped, to garnish.
  • - Fresh coriander leaves, to garnish.  

This is a really light and healthy meal.


Serves: 2 | Prep Time: 15 minutes | Difficulty: Easy.

Method:

  1. Cook the rice according to the instructions on the packet. Drain and leave to cool.

  2. Using a wok or large frying pan, fry the rice and vegetables with a little bit of olive oil stirring continuously. Stir in the chilli jam.

  3. Beat in the eggs and continue to stir until the eggs are fried.

  4. Season with salt and pepper. Garnish with spring onion and fresh coriander.
